Buttercream Masterclass - 30th June 2025

This demonstration is perfect for beginners wanting to learn how to confidently fill and cover your cake in Buttercream. Jess will use american buttercream as a filling and swiss meringue buttercream as a covering, so you can understand how to use both. 

Perfect for anyone who wants to turn their passion for baking into a polished business or for those who need to refine their buttercream and cake decorating skills. 

You can be an absolute beginner without any prior experience, someone who wishes to create beautiful cakes for family and special occasions, or an experienced baker who wants to enhance their skills and create more appealing cakes, 

When you have good foundations, everything else will fall into place. 

You will learn: 

• A brief intro discussing what makes the perfect base sponge
• Making swiss meringue buttercream, including the ratios and ingredients needed. 
• Making american buttercream, including the ratios and ingredients needed. 
• How to flavour your buttercream
• What fillings work well in buttercream cakes
• How to level your cake sponges to create a straight and well balanced layer cake. 
• Fill, Stack and crumb coat your cake with American Buttercream. 
• Apply a final top coat using whitened Swiss Meringue Buttercream and how to achieve a flawlessly smooth finish.
• The different consistencies needed to use buttercream correctly
• Create a sharp edge.
• What to do when things go wrong such as splitting or curdling.
• How to tackle those pesky air bubbles 
• Troubleshooting question time
