This beginner-friendly demonstration will show you how to make ganache specifically for covering cakes. You'll learn the correct chocolate-to-cream ratios, how to achieve the right consistency, and techniques for covering cakes in ganache with a smooth, sharp finish - helping create the perfect foundation for a stable surface when covering cakes in fondant.
You will learn:
- How to make white/milk/dark chocolate ganache
- The science behind ganache
- How to apply a crumb coat of white chocolate ganache.
- How to apply a final, whitened coat of ganache
- How to handle ganache in the warmer weather
- What to do when things go wrong, such as ganache splitting or cracking
